Beef fajitas recipe

With only 418 calories per serving, these sizzling beef fajitas are a delightful and fuss-free dinner that the whole family will enjoy. You can make them in about 20 minutes.

Ingredients:

  • 11/2 tablespoons of rapeseed oil
  • One yellow pepper, thinly sliced
  • One red pepper, thinly sliced
  • 400g of thinly sliced sirloin steaks that have been trimmed
  • 4 tablespoons HP Guinness sauce
  • two cloves of coarsely chopped garlic
  • 1 teaspoon ground cumin
  • 3/4 teaspoon ground coriander
  • Half a teaspoon of hot chili powder (add more if desired)
  • Two chopped tomatoes and three tablespoons of fresh coriander
  • Four 20cm flour tortillas, four tablespoons of natural low-fat yogurt, warmed
  • To serve: salad

Method:

  1. In a nonstick deep-frying pan, heat a tablespoon of oil over high heat. Add the peppers and onion, and cook, stirring periodically, for 3–4 minutes until blackened. Remove from the pan.
  2. Fry the steak for two minutes, turning once, while adding the remaining oil.
  3. Add the garlic, cumin, coriander, chilli powder, HP Guinness sauce, and tomatoes. Cook for 15 seconds, then add the vegetables back and cook for an additional minute.
  4. After adding the coriander and seasoning, divide among the reheated tortillas. Serve with salad and yogurt after rolling.

As an alternative, roll up the tortillas, place on a baking sheet, top with cheese and grill under golden
