You'll make this simple meatball recipe often because it's a tasty and quick midweek supper. Since using sausage meat is a great time-saving tip, we've utilized pig and apple sausages to produce our meatballs. It's a fantastic idea to have a simple meatball recipe in your repertoire. Though bucatini is what we served our meatballs with, you are welcome to substitute any kind of pasta.

Ingredients:

  • 400g sausages made with free-range pork and apples
  • two tablespoons of olive oil
  • One little onion, finely sliced
  • One crushed garlic clove, ½ chopped fresh or dried chilli, and a handful of big basil leaves
  • 400g of plum tomatoes in a can
  • One tablespoon dried oregano and two tablespoons tomato puree
  • 1 tablespoon balsamic vinegar
  • To serve: 300g of Bucatini pasta and 40g of grated Parmesan cheese

Method:

  1. Transfer the sausage meat into a bowl and mix in 1 tablespoon of finely chopped onion. Mix well and season well. Form the ingredients into 12 meatballs of uniform size using wet hands. To help them firm up, place in the refrigerator for 20 to 30 minutes.
  2. In the meantime, heat up the oil in a frying pan to medium-high. Fry the remaining onion for 5 to 7 minutes, or until it's tender and has a hint of color. Stir in the garlic and chilli and add the large basil leaves once they get colored.
  3. Add the tomatoes, puree, balsamic vinegar, and dried oregano. Simmer for a few more minutes after bringing to a simmer.
  4. Once the meatballs are cooked through and have a nice color, fry them over medium-high heat. When the meatballs are cooked, add them to the tomato sauce. Pasta should be cooked in boiling salted water as directed on the package, drained, and then added back to the pan. Stir in half of the pasta sauce. Spoon the meatballs and remaining sauce over the pasta, dividing it amongst plates and top with a good grating of Parmesan cheese.
